Healthy Gluten Free Lactation Oatmeal Chocolate Chip Cookies

Gluten free oatmeal chocolate chip cookies

WOW. When I say these turned out amazing, kinda like a thin chocolate chip chewy bar, I was shocked. I totally winged it with the amounts, didn't even use measuring spoons, lots of eyeballing, but it was so good, and that's when I realized that you only need a few staple ingredients ever to make cookies: flour, egg, oil (or butter), oatmeal, and chocolate chips. You can add anything else you'd like in these like nuts or dried fruit, or seeds. Today I craved chocolate and oatmeal. These promote lactation by adding in the brewers yeast, which is not only good for lactation but a great dietary supplement and probiotic! Feel free to take it out if you don't want to use it. It is not a necessary ingredient.


INGREDIENTS

  • 1 1/4 cup of Almond Flour

  • 1 cup of Oatmeal

  • 1/2 cup of Brown Sugar

  • 1/2 cup of Chocolate Chips

  • 2 Eggs

  • 2 Tablespoons of Melted Coconut Oil

  • Sea Salt

  • 1/2 Tablespoon of Baking Powder

  • 1/2 Tablespoon of Brewers Yeast


First, mix all dry ingredients, then add the eggs and coconut oil and mix. Add chocolate chips or add ins. Roll into balls and place on parchment lined baking tray. Bake at 350 for 17-20 minutes until golden brown on the outsides. They will finish baking while cooling.
